This North Indian winter delicacy is popular all through India. If you want to treat your family with Gajar Halwa, it is best to buy the red Delhi carrots; you may also make it with other carrots.
Ingredients
Delhi carrots (or regular ones)(grated) – 1 kg
AgriGold Pasteurised Whole Milk – 1 litre
Cardamom seeds- 1 tsp
Water – 1 cup
AgriGold Ghee – 2-4 tbsp (depends on how rich you want it)
Raisins (soaked in water) – 2 tbsp
Cashew and almonds (shredded) – 3 tbsp
Sugar – 200-250 gm
Method
- Boil water. Add grated carrots. Cook for about 5 minutes
- Now add the milk. Cook for an hour over low flame and keep stirring continuously
- Add sugar and cook till you get the right consistency for the halwa
- Add ghee and cook for few more minutes
- Put the nuts, raisins and cardamom in at this point. Remove from heat
Serve hot
