From Agrigold’s Dairy Diary - Vanilla Milk Fudge


If you have a sweet tooth or your family loves to have something sweet after dinner, you can always have the vanilla milk fudge at home. It’s easy to make and you can store it for a long time in the refrigerator.

Ingredients

Agrigold Amrutam (pasteurized whole milk) – 300 ml
Sugar – 3 ½ cups
Butter – 100 g
Vanilla essence – 2 tsp


Method

  • In a heavy bottomed pan, pour the milk and bring it to a boil
  • Now add butter and sugar to the milk. Keep stirring
  • Cover and boil milk for about 2 min.
  • Uncover. Boil and keep stirring. After 10-15 min. take a little of the mixture and drop in a small bowl of cold water, and form a soft ball rolling it between your thumb and fingers. If you can do this, the mix is ready
  • Remove from heat. Put in the vanilla essence. Mix well and leave it to cool for about 5 min.
  • Now beat the fudge till it starts losing its shine and becomes thick
  • Transfer the fudge to a square container. When cool and firm, cut into squares with a sharp knife

Store in refrigerator in an airtight container.

From Agrigold’s Dairy Diary - Masala Raita

If you are bored of having the same bland raita as an accompaniment to lunch every day, you will love to taste the masala raita. It will tingle your taste buds and give you the experience of an exotic taste.

Ingredients

Agrigold curd/dahi – 2 cups
Finely chopped cucumber – 1 no.
Finely chopped tomato – 2 nos.
Finely chopped onion – 2 nos.
Fresh coriander leaves – 1 bunch
Cumin seeds – 2 tsp.
Coriander seeds – 2 tsp.
Fennel seeds (saunf) – 1 tsp.
Fenugreek seeds – 1tsp.
Ajwain seeds – 1 tsp.
Ginger powder – 1 tsp.
Black salt – 1 tsp.
Agrigold red chilli powder – 1 tsp.
Agrigold Black pepper powder – 1 tsp.
Some dried mint leaves
Salt to taste
(Except the curd, cucumber, tomato, onion and coriander leaves, dry roast everything, grind and have a dry mixture ready)


Method

  • Put the curd in a mixing bowl. Add a portion of the dry mixture generously, depending on your taste. Mix well
  • Now add the cucumber, tomato, onion to the mixture. Mix again
  • Now mix in the coriander leaves gently. Refrigerate for at least half an hour

Serve cold

From Agrigold’s Dairy Diary - Purple Delight Milkshake


Ingredients

Pure black grape juice (frozen) – 1/3 cup
Agrigold toned milk – 1 cup
Peeled and slice banana – 1 no.
Ice cubes - 1/2 cup


Method

Mix all ingredients well. Blend until smooth

Serve immediately.

From Agrigold’s Dairy Diary – Creamy Coconut Milkshake


If you love the taste of coconut milk, you will surely love this milkshake. Though it's not low on calories, it can give you a taste of heaven with every sip.

Ingredients

Agrigold Toned milk – 1 ½ cup
Agrigold Vanilla ice cream – 8 scoops
Coconut milk – 1/2 cup
Cream – 3 heaped tbsp.


Method

  • Mix the milk, ice cream, coconut milk and cream well
  • Mix some ice (optional). Blend for 2 min.

Pour into tall glasses. Serve.

From Agrigold's Dairy Diary - Pina Colada Smoothie


Ingredients

Frozen pineapple pieces - 1 cup
Frozen and peeled banana – 1 no.
Agrigold Standerdised milk - 3/4 cups
Agri Gold curd/dahi (frozen) - 1/2 cup
Orange juice - 1/2 cup
Shredded coconut - 3 tbsp.


Method

Mix all ingredients together. Blend until smooth.

Garnish with some shredded coconut (optional). Serve immediately.

From Agrigold's Dairy Diary - Radish-Yogurt Chutney


Chutneys can be used as accompaniments with your daily lunch and dinner. It’s all the better if that chutney can also be healthy rather than be oily and full of red chilli powder.

Ingredients

Agri Gold curd/dahi – ½ cup
Grated red radish – 6 tbsp
Toasted cumin seeds – ½ tsp
Shredded fresh mint leaves – 2 tsp
Deseeded and chopped green chillies – 2 nos.
Salt to taste


Method

In a mixing bowl, add the curd, grated radish, cumin seeds, mint leaves and salt. Mix well
Now add the chillies; you may choose not to add chillies at all

Serve chilled

From Agrigold's Dairy Diary - Dry Fruit Milkshake


A dry fruit milkshake can be a healthy treat for children as well as for adults. So, get ready for an energy booster that will get you kicking and full of life in just some time.

Ingredients

Agrigold Standardised milk – 1 l
Dates –10-12 nos.
Skinned almonds – 50 g
Chopped pista – 4 tbsp.
Apricot – 8-10 nos.
Sugar – 50 g
Honey – ½ cup



Method

  • Soak almonds, dates, and apricot in hot water overnight or at least for 4 hours
  • Drain and grind to a smooth paste
  • Add sugar, honey and milk to the paste. Blend
  • Refrigerate for an hour. Blend again till frothy
  • Garnish with chopped pista

Serve chilled.

From Agrigold's Dairy Diary - Strawberry Yogurt Smoothie


Ingredients

Ripe strawberries – 4 cups
AgriGold Curd/Dahi – 250 ml
Orange juice – ¼ cup (optional)
Sugar – 1 tbsp


Method
  • Chop the strawberries and puree them
  • In a blender, put in the pureed strawberries, curd and sugar. Add orange juice if you want. Blend until smooth

Pour into tall glasses. Serve chilled.

From Agrigold's Dairy Diary - Yogurt Cherry Ice Delight


Want to make ice cream at home for your children? No ice cream maker? Do not worry; you can whip up this ice delight and give your family a healthy and tasty treat if you have just a refrigerator. This recipe is also ideal for dessert.

Ingredients

AgriGold curd/dahi – 1 kg
Pureed cherries – 225 g
AgriGold toned milk – 6 tbsp
Caster sugar – 25 g


Method


  • In a big mixing bowl, pour in half the curd. Whisk in the caster sugar and milk
  • Now add the rest of the curd and whisk well. Cover the mixing bowl and freeze for at least 3 hours
  • Break the solid icy mix and again whisk well till quite smooth
  • Put in the pureed cherries now and mix. Freeze the mixture for at least 3 hours again covered

Serve 10 minutes after taking out the mixture from the refrigerator. Enjoy!

From Agrigold's Dairy Diary - Iced Coffee


Ingredients

Instant Coffee powder – 2 tsp
Lukewarm water – 3 tbsp
Spices mixture (nutmeg, ginger and cinnamon) – 1 tsp
AgriGold Standerdised milk – 1 cup
Sugar – 2 tsp
Ice cubes – 5-6 nos.


Method

  • Mix the coffee powder, spices mixture, lukewarm water and sugar in a bottle or jar. Put the lid on and shake the ingredients
  • In two serving glasses, pour in the milk and ice cubes
  • Add the coffee and spice mixture to the glasses now

Serve immediately.

From Agrigold's Dairy Diary - Banana Milkshake

If your children make a fuss when you offer them fruits or milk, whip up a tasty banana milkshake for them and see how they love lapping it all up.

Ingredients

Banana (ripe) – 1
AgriGold Standardised milk – 500 ml
Sugar – 3 tsp
Vanilla essence – 2-3 drops (optional)




Method
  • Chop the banana in thin slices. Add them to 250 ml milk and blend in a food processor till very smooth
  •  Now add the rest of the milk, sugar and vanilla essence, and whip it with an electric beater 
  •  When frothy, pour into two long glasses; garnish with banana slices
Serve chilled

From Agrigold's Dairy Diary - Gajar/Carrots Halwa


This North Indian winter delicacy is popular all through India. If you want to treat your family with Gajar Halwa, it is best to buy the red Delhi carrots; you may also make it with other carrots.

Ingredients

Delhi carrots (or regular ones)(grated) – 1 kg
AgriGold Pasteurised Whole Milk – 1 litre
Cardamom seeds- 1 tsp
Water – 1 cup
AgriGold Ghee – 2-4 tbsp (depends on how rich you want it)
Raisins (soaked in water) – 2 tbsp
Cashew and almonds (shredded) – 3 tbsp
Sugar – 200-250 gm


Method

  • Boil water. Add grated carrots. Cook for about 5 minutes
  • Now add the milk. Cook for an hour over low flame and keep stirring continuously
  • Add sugar and cook till you get the right consistency for the halwa
  • Add ghee and cook for few more minutes
  • Put the nuts, raisins and cardamom in at this point. Remove from heat

Serve hot

From Agrigold's Dairy Diary - Porridge


Ingredients

Oats – 1 cup
AgriGold Toned Milk/Pasteurised Whole Milk – 2.5 cups
Sugar – 2 tsp
AgriGold curd/dahi – 1 heaped tbsp
Honey – 1 tbsp
Salt – a pinch


Method

  • In a thick bottomed nonstick saucepan, pour the milk and the oats and add to it just a pinch of salt. Boil
  • After it comes to a boil, let it simmer for about 5 minutes. Stir continuously
  • Remove from heat. Let it set for a couple of minutes
  • Before serving, add curd and drizzle with honey

Serve hot.

From Agrigold's Dairy Diary - Vanilla Ice cream


Ingredients

AgriGold Vanilla ice cream powder – 4 heaped tbsp
AgriGold Standardised milk – 5 cups
Fresh cream – 1 cup
Sugar – 5 tbsp
Cornflour – 2 tbsp



Method

  • Mix ice cream powder and cornflour in one cup milk. Make it smooth
  • Add remaining milk to the mixture, and add the sugar and boil it over low flame. Stir continuously
  • Strain and pour the mixture in an air tight container. You may cover it with a cling film
  • Refrigerate in the freezer for an hour to let the mixture settle
  • Now break the frozen mixture and add fresh cream
  • Keep whisking till the quantity increases considerably. It will double
  • Pour the mixture in an air tight container and cover with a cling film. Freeze
  • Fill the ice cream in a piping bag and freeze once again
  • Take out the bag from the freezer and leave it in room temperature for 10 minutes

Ice cream is ready. Scoop and serve.

From Agrigold's Dairy Diary - Mixed Fruit Custard


Ingredients

AgriGold vanilla custard powder - 2 tbsp
AgriGold Standardised milk - 2 1/2 cups
Sugar - 50 gm or to your taste
Mixed fruits (chopped strawberry, oranges, grapes, or other fruits)


Method


  • Mix the vanilla custard powder with about 4 tbsp of hot milk and make a smooth paste; make sure there are no lumps
  • Boil the rest of the milk. Add sugar 
  • Add the vanilla custard paste to the milk. Keep stirring till it gets thick
  • Let it cool down for some time. Now refrigerate
  • Chop fruits that you like and put into a bowl
  • Pour the cold custard over the fruits just before serving

From Agrigold's Dairy Diary - Tomato Raita


Ingredients

AgriGold Curd/Dahi – 2 cups
AgriGold Standardised milk - 1/4 cup
Finely chopped tomatoes – 1 cup
Roasted AgriGold cumin (jeera) powder – 1 tsp
Chopped cilantro – 1/2 cup
Chopped green chillies - 2
Salt to taste



Method


  • Put the curd and milk in a mixing bowl
  • Add the cumin powder, salt and chopped green chillies. Mix well till smooth
  • Add the chopped tomatoes and mix well


Refrigerate the raita for sometime. Garnish with the chopped cilantro before serving.

From Agrigold's Dairy Diary - Hot Chocolate


Ingredients

Cocoa powder – 1 tbsp
Sugar – 1 tbsp
Water – 1/3 cup
AgriGold Standardised milk – 2/3 cup
Cream – 1 tbsp
Salt- a pinch
Crushed/grated chocolate for garnishing




Method


  • In a saucepan, mix the cocoa powder, sugar and salt with water. Put the saucepan over a low flame and keep stirring for 2 minutes
  • Now add milk to the mixture
  • Take the saucepan off the flame and pour the mix into a cup/glass

Garnish with cream and crushed/grated chocolate. Serve hot.

From Agrigold's Dairy Diary - Chocolate Milk Shake


Ingredients

AgriGold Standardised milk – 2 cups
Chocolate syrup – 2 tbsp or Cocoa powder – 1 tbsp
Vanilla ice cream – 2 cups
Vanilla extract – ¾ tsp



Method

  • Put the milk, chocolate syrup/cocoa powder, vanilla ice cream and vanilla extract in a blender and blend for half a minute. You can also put the ingredients in a mixing bowl and use a hand blender to blend 
  • Stir well

Pour into a tall glass and garnish with crushed chocolate. Enjoy the drink!

From Agrigold's Dairy Diary - Sweet Lassi


Ingredients

AgriGold curd/dahi – 1 cup
Water/cold milk – 1 cup
Sugar – 4 tsp
Cardamom seeds – 1 crushed



Method

  • Put the curd, water and sugar in a mixing bowl
  • Use a blender to blend these ingredients together. In case there is no blender, mix sugar with curd and then add water, and shake the mixture vigorously to get froth
  • Pour the lassi out into 2 glasses and garnish with the crushed cardamom seeds

Serve chilled or put ice cubes into the glasses.

From Agrigold's Dairy Diary - Badam Payasam


Ingredients:

Badam/almonds - 1/2 cup
Sugar - 3 tblsp
Cardamoms - 5 crushed
Saffron - a pinch soaked in little lukewarm milk



Method:


  • Boil half a litre of water in a saucepan
  • Add the almonds when the water is boiling and cook for 2 minutes. Remove from the flame, drain and      keep aside
  • Remove skin of the almonds and grind them to a fine paste
  • Boil milk in a thick bottomed pan; when boiling, add the almond paste to it along with the sugar and stir continuously for about 5 minutes over a low flame
  • Remove from flame. Now add the saffron and the crushed cardamoms

You may serve it hot or cold.
(If you are serving it chilled, remember to add a bit more sugar than when you want to serve it hot)
